- 1 lb green beans (fresh or frozen)
- 3 medium tomatoes
- 1/2 small red onion
Mixing your Goods:
Steam green beans, take out while they still have a crunch left (al dente). Add tomatoes and onion, either sliced thin or in big chunks (whatever your preference). Drizzle olive oil and lemon juice, salt and pepper to taste. Serve warm or make it ahead and keep cold for a refreshing snack.
