This vegetarian cole slaw is the perfect addition to your picnic spread.
Shopping List:
- 3 Cups shredded green cabbage
- 1 Cup shredded red cabbage
- 1 Cup grated carrot
Dressing:
- 3 tbsp vegan mayonnaise (such as Veganaise or JustMayo)
- 1 tbsp Dijon mustard
- 2 tsp rice vinegar
- 1 tsp celery seed
Mixing your Goods:
Put the cabbage and carrot in a large bowl and toss to combine. In a small bowl, whisk together the dressing ingredients - vegan mayo, Dijon, rice vinegar and celery seed. Pour dressing over cabbage and toss. Will keep for 2 days in refrigerator.
