Vanilla Chia Pudding

They're rich in omega-3 fatty acids, soluble fiber, and plant-based protein, all in a seed that takes almost no effort to prepare. This vanilla chia pudding comes together in minutes, sets overnight, and keeps in the fridge for 3 days, so you can make one batch and have breakfast — or dessert — handled for most of the week. Use almond milk for a lighter base or coconut milk if you want something a little richer. Top with fresh berries and you've got something that feels indulgent without actually being indulgent.

Shopping List:

  • 2/3 cup chia seeds
  • 2 cups unsweetened almond or coconut milk
  • 1 tsp. ground cinnamon
  • 1 tsp. vanilla extract

Mixing your Goods:

Blend unsweetened almond milk or coconut milk, vanilla, and cinnamon until creamy and smooth. Pour into a bowl, stir in chia seeds, and chill for an hour or more. Will keep for 3 days. Great as is or topped with berries.
